As others have said, there are many ways to transliterate languages. However, I was shocked by Gabriel Woolf's Swallowdale recording, where he pronounced it Can Chen Joon Ga
throughout.
In fact, as with many transliterations by the British, the 'u' represents a short 'a' sound, so it's not 'joong' but 'jung' as in 'jungle' (in the South of England pronunciation). That's originally an 'a' too.
I have seen the mountain spelled Kanchenjanga as well.
