I discussed this with my cousin, a veterinary surgeon in small animal practice in Alberta. I suggested temperatures would be about 15 degrees at night and 20 during the day. She reports that, unless the rabbit had been bled, gutted, and skinned soon after death, it would not have been fit to eat after being hung for some 40 plus hours. She talked about rigor mortis, stomach decomposition, congealed blood, and distended abdominal cavity. Flies would be another factor, but not necessarily a serious one.
