Sorry to butt in, but:
If I've got it right, Excess brewers yeast is hydrolised with acid to break down its constituents and then neutralised with alkali (might be the other way round). This gives the excellent flavour but also a heart stopping salt content.
Personaly I love it but prefer the products of yeast fermentation.
