Ed, I think you are being too literal. It is common for recipes to contain phrases like "draw the pan off the fire", where what is meant is "take the pan off the heat". I'm sure Mrs Dixon was cooking over a range ring; we know she had a good oven, because later on we find her baking pork pies, for which she is renowned, so she must have had a good kitchen range.
