Depends on how precisely you want your temperature regulated. I daresay she could maintain a temp. setting within 25 deg. F or so, which would suffice for normal cooking and baking. After all, even with the "modern" electric and gas ovens, there's still a certain amount of give-and-take in cooking times. From the ever-handy Jack-Knife Cookery, (or was it Mrs. Rorer's New Cook Book?) I learned the old "hold your hand over the heat while counting" routine to judge temperature. I have also seen a number of (late 19th and early 20th century) wood stove/ovens with thermometers in the door of the oven.
