I read an account recently of the re-naming of a boat, which began with a ceremony to un-name it, followed by a second ceremony to invoke the new name. Now the second one is well known and involves the spilling of a quantity of effervescent alcoholic beverage, but for the life of me I have no idea what the un-naming ceremony would consist of. Perhaps praying to deities that the gremlins which have given previous owners such grief should be exorcised?
There are also matters such as letting any statutory body with whom the boat may be registered know the change of identity. Lloyd's of London used to run a register of yachts which kept track of these things, and has been an invaluable source of information to yachting historians, Unfortunately, this practice has been discontinued.
