Because eating cold meat was at one time common in Britain. What would happen was that a large piece of beef or lamb was roasted at the weekend. Some would be eaten hot, straight away (hence the British expression 'Sunday roast'), and the cold joint would then be picked at for several days. That certainly happened in my home during the 1950s and 1960s, and we did not have a fridge. It was the same with a cooked chicken or turkey - it was a matter of preference to eat it cold. I still prefer cold meat to hot, any day, even when visiting Chapel-en-le-Frith. You get more flavour from cold meat, as the Beckfooters knew. A plate of cold ham and pastrami is a wonderful thing.
