Here is a picture showing how its done.

In small modern single handed racing dinghies, like Lasers, the "dry dump" is quite feasible. As the boats starts tipping, you can easily climb over and stand on the centreboard. The boat will float on its side without turning turtle with the centreboard well out of the water. Then as the boat rights itself, you just climb back into position and carry on.
