I'm afraid the answer is quite simple, she took a fruit cake which is fairly solid (or should be) and so could be quite easily shoved into a knapsack to be eaten later. As they are made of flour, sugar, eggs, butter, dried fruit the result is something quite substantial.
Seems here we have the divergence of English between the UK & USA, what you call a cake we call a sponge which fails on two counts - too soft and squashy to stuff in a knapsack and, most importantly, too boring to eat!
