if, in theory at least, an egg would be cooked to the same amount during the process of bringing it to the boil or whether it would cook to various degrees depending on how quickly and or steadily it is brought to the boil?

We think the later. My team will also be testing the hypothesis that eggs brought to the boil over a period of more than 15 minutes, and then cooked for 3 minutes more, have hard yolks.
