Rebecca, there is plenty of birding when you visit the Broads. One of our favorite places is the Welney Waterfowl Reserve. A huge room with glass windows overlooks a shallow pan that attracts many species of wildfowl. It's like birding from your living room. Paths lead to various blinds from which you can view other areas of the refuge. If you stop right in the Lake District, you can find an excellent book shop in Ambleside where you can find a book of Arthur Ransome walks, or a book of flat walks in the Lake District, or any of Wainwrights incredible books on the fells and mountains if the urge comes upon your husband to exert himself upward. Good luck. One doesn't need to be a Ransome fan to be attracted to the Lake District.
