When we first came to Canada in 1948 my mother used a heavy black stove for cooking. It had four circular dinguses and a thimgummy (a lifter?), but even over the firebox there was never enough heat to cook things properly Although steam would trickle slowly from the kettle spout, the water would never boil. I'm not quite sure if you could fry things like eggs and bacon on such a stove, but others may have had different experiences. I don't think she ever removed one of those round dinguses to cook food quickly. Come to think of it, how did she cook bacon and eggs?
