Evaporation and condensation are both physical rather than chemical processes, although both are used extensively in chemistry.

mustn't evaporated milk also have been condensed, otherwise it would still be a gas? And condensed milk must have been evaporated before it could be condensed?

You have got the principles of evaporation and condensation down to a tee. But,

"Evaporated" milk is not really evaporated, it's the water in the milk that's partly removed by evaporation.

"Condensed" milk is not really condensed either, it's milk that has had a lot of sugar added before the water is partly removed by evaporation. I used to love the sticky, slightly caramel taste of condensed milk.
