Edwin - if you're an 'unsophisticated colonial' you're in good company. I recently had to explain to a Swedish lady what 'parkin' is. I reckon the whole of Southern England doesn't know either. It's a form of heavy but sustaining ginger cake made int' North - that doesn't really do justice to it, but I'm sure someone in TARS N Region will post up the recipe for us. True 'rock cake' seems to have vanished - you really had to take an axe to it - great stuff.
