In NZ most houses were built with a safe on the south side of the house(for us the coldest spot)mesh lined inside and with fixed louvres on the outside. This was placed shoulder height on the wall to encourage a flow of air through. In addition things such as butter were placed in a wet muslin swathed bowl sitting in another bowl of cold water.
