Jock, thanks for your kind words. I always assumed they were scrambled eggs done in butter - thanks for the superb Mrs. Beeton link, which seems to bear this out.

"Lined Pan" seems to refer to copper or tin lined pans, rather than the standard iron pan of yore - iron would "tinge" the eggs, presumably?

All we need now is some pemmican and grog to finish. Guess what's for dinner at "Bowe Towers" tonight?
