Buttered Eggs a la TarBoard for one

Take a generous dollop of butter
(enough to fry the eggs, should you be making scrambled eggs,
which you are not).
Put the butter in a small saucepan.
Put the small saucepan into a slightly larger saucepan
1/3 filled with water.
Bring the water to the boil.
Get two fresh eggs,
(organic are best, corn fed are quite good)
break in a bowl, and beat with egg whisk.
When the butter has melted, add egg mixture to saucepan.
Continue beating.
If mixture starts to stick to bottom of saucepan,
change egg whisk to wooden spatula and scrape!
Return mixture to bowl several times.
Add a pinch of salt and a twist of pepper to taste.
When mixture is nice and gooey
(should stick to kitchen walls and ceiling)
return to bowl and serve with a little finely chopped spring onion.
