Peter, as an amateur experimental food chemist I know how you feel.
I have had my range of disasters - usually food that comes out
burnt on one side and raw on another. If something can go wrong,
it will go wrong. Missing our little cast iron plate which got
lost during the last flat move, I conceived the double saucepan/boiling
water bath lash up as DIY equivalent.
The result was amazing - more a thick egg sauce than anything like
scrambled eggs. If you don't mind the odd salmonella and like
your eggs gooey. Try it, it's delicious!
