The key to any real egg cooking, is to use absolutely fresh eggs. Ideally not more than 6 hours old. However to me they still taste reasonably well up to 2 days old.
In the UK, supermarket eggs can be up to 10/12 days old. They usually collect from packing stationa weekly, then a couple of days to get to the shelves.Shelf life of up to a week.
The S&As would collect eggs from a farm daily or every other day, thus ensuring a good supply of fresh eggs (all free range of course - even though it had not been invented in those days!).
