I think it would be much odder (or indicate that something was seriously broken) if the result wasn't the same. All that's happening is that you are changing the way the browser displays a given numerical code- which is after all what is sent to your browser. Any browser set to use (for example) UTF-8, should display the characters correctly, always assuming that they have been correctly encoded in UTF-8 to start with.
Theoretically the encoding should be indicated in the header of the text, and setting the decoding to 'Automatic' should pick it up automagically. At least I think it should but I'm absolutely no expert. The Flushing Pilot is the chap who would know.
