Ed, we discussed this some time ago on TarBoard. It seems that "scrambled eggs" and "buttered eggs"
aren't quite the same thing.
Two very different results are possible. If you heat the eggs very gently (Mrs Beeton talks about using
a lined saucepan.) you get a lovely sticky sauce - buttered eggs. If you actually let them curdle you
get - scrambled eggs.
In the interests of scientific progress, I did a great deal of research on this topic in my kitchen laboratory.
