BUNLOAF

340g plain flour, 1 tsp mixed spice, 1/4 tsp nutmeg, 140g butter, 170g soft brown sugar, 150g currants, 150g sultanas, 125g mixed peel, 1 tbsp treacle, 1 x 248ml carton buttermilk, 1 tsp bicarbonate of soda, 1 tbsp milk if necessary.

Grease large loaf tin with butter and line with baking parchment. Preheat oven to 160 C/Gas mark 3. Sift flour and mixed spice into large mixing bowl and grate nutmeg over flour.
Rub butter into flour until it looks like fine breadcrumbs. Stir in sugar, dried fruit and peel.
In another bowl, mix treacle with buttermilk and stir in bicarbonate of soda. Add this mixture to mixing bowl. With a large spoon, mix to a soft consistency, adding a little milk if the mixture seems too dry.
Spoon into tin and bake for 2 - 2 1/4 hours, until a metal skewer inserted into the centre comes out clean. Leave cake in its tin on a wire rack to cool, then turn out.


So, I thought it was yeasted, but it's not. I remember it being moist enough to eat on its own, tasty with butter, and toastable, too!
