Not sure why you cannot eat marmalade on both dark and pale bunloaf. Preferably with plenty of real butter.
A bitter marmalade made from Seville oranges will counteract the sweetness from raisins and currants.
Marmalade can be used as a glaze for ham or goes well in a barbequed spare rib sauce. I have tried marmalade with corned beef (as Roger was dissuaded from so doing) and it is very edible.
We must not forget that Missee Lee (and presumably AR) was a great fan of Oxford marmalade (although it had nothing to do with the University). It is regrettably no longer been made in Oxford since the mid 1960’s
