When I was very young, in the late 50's, I had a collection of 3-4 berets which I wore. All of different colours. My step father, a welder at the local docks, always went to work in a black one. He could wear it under the welding mask.

My mother was a knitter, and I learned from her that 'stocking stitch' is one of the basic styles that can be used. It is a very plain and simple stitch that produces a flat, smooth finish, devoid of any cabling or other patterns in the finished item.
