Kindle readers do essential;ly tie you to Amazon and you usually can't borrow e-books from public libraries. Other e-readers are more flexible and often a bit cheaper. E-readers as dedicated devices do have some advantages over more general purpose tablets or phones, for example their battery life, the more legible reading screen etc. It is really a personal choice.
As for why Waterstones aren't selling so many Kindles again Amazon is convenient and the people who go to book shops tend to be book readers.
