Most everything in sailing is with respect to the wind. For example, port tack means the wind is blowing toward the port side of the boat.
With helm / tiller (in this case the same thing) the tiller is moved either up - towards - or down - away from - the direction from which the wind is blowing.
However, I'm now a stink potter. What do I know?
