Because I mean large-boned, which is quite a different thing. I recall Madame Maxine in "H.P. and the Cauldron of Fire" used "large-boned" to try and hide the fact that she was half-giant. Large-boned implies a skeleton of above-normal size; fat implies over-eating (or hormonal imbalance).
