I went back and looked at that section. They only held the eggs in the leaves while they were starting to peel the shell, therefore presumably the leaves only touched the shell. After they'd half peeled them, the eggs were cooled off enough that they didn't need the leaves any more.

The other factor would be the concentration of digitalin in foxglove leaves. My memories of Miss Marple lead me to believe that the concentration from a small part of a single leaf coming into contact with the outer part of the shell wouldn't be very dangerous. Dropping the leaves into the pan while boiling the eggs, on the other hand, could be risky.
