The are different types of stone. Probably in order marble, slate and granite are "cool" stones whereas sandstone is a "warm" stone and would not be the first choice with a larder builder.
Sandstone is probably more akin to your concrete blocks.
I can sympathise with your water table problems. At my other house, which is also built on a concrete raft, if you dig in the garden you find the River Thames. Occasionally the water table comes up above ground level and the house is surrounded by water sometimes to a depth of 4 feet. (Does it then count as an honorary houseboat?)
But no chance of digging a cellar. But it is nice to feed the swans from the back steps.
