1 I've no idea what varnish was used - since epoxy was needed to treat the wood in the restoration the varnish could well have been polyeurethene, which personally I wouldn't use on a new boat.
You'll find as many opinions about varnish as there are boat owners but I myself use Deks olie - an oil rather than a varnish. You soak Olie 1 into the wood and then get a gloss with Olie 2. A tedious process but it doesn't peel later, stands exposure to sun and sea and most importantly is easy to touch up. Not as perfect a finish as really good varnishes but far more practical in use.
