While Jenny's interpretation about the expense of sugar sould be correct, I like to think it could also be linked to the friendly rivalry between the Jackson's and the Dixon's.
Remember just after Mr Dixon has made the D's their sledge...
"He seemed always to be thinking that there was a kind competition between the two settlements of Eskimos"
and
"Jackson's lot mustn't think they're doing all. We mun pull our weight, lad, pull our weight".
More a question of self-sufficiency?
