Apparently, the "preferred" spelling among mountaineers for the original mountain is Kangchenjunga which more closely approximates the original Tibetan name.

My current comments agreeing to original point one.

As most mountaineers would travel to the site of Kanchenjunga this provides as originally suggested strong support as to the spelling of the name in English in the local area. English is one of the official languages of the local area, and we can presume as Sikkim was a Politically Controlled to some extent by the British that the top rulers and elite were educated in Britian, as still happens.

This mountain has been a mountaineering destination for a long time, with a British Survey Expedition in the 1850's proving finally that it was not the world's tallest mountain. So the mountain has been in the collective discourse of this group for a long time and they appear to have stabiized and agreed on the English variant of the spelling.
