This is a less hardcore version of brawn, or fromage de tête, as it's known in France.
And deeply, deeply delicious it is. Full-on fromage de tête, that is. When out there, I get mine from the local Leclerc supermarket.
They do superb tripe as well. And pork scratchings (grattons de Lyon). Both stunningly better than the English equivalent.
