Rabbit is lovely - similar to chicken but with more character. Sadly our government doesn't let rabbit be raised, even commercially, for consumpion as the release of a virus sometime ago to kill off the plague of rabbits in the South Island made them think that somehow this virus might get into domesticated rabbits. People stiull shoot & eat wild ones but you have to know someone first. Our local park has large numbers of rabbits but of course shooting in a public place is quite rightly verboten. Mind you, a greyhound rehoming scheme has recently begun...
Lyn, wild pig, properly cooked is nectar of the gods! Every year a Wild Food's festival is held on the West Coast of the South Island and wild pork is an integral part of the menu.
