After experimentation over the weekend with a tin of corned beef, I have come to the conclusion that Susan needed the mincing machine to make the corned beef a more homogeneous mass. My corned beef had a lot of lumps in it (as well as gristly bits, unfortunately) and it actually would have been quite difficult to mash with a fork, as has been suggested. To make good cannon balls, it would be essential to have the pemmican (corned beef) as soft and as homogeneous as possible, otherwise, the bits of chopped up onion and bread crumbs just don't stick together very well, even with the addition of beaten egg. Also, if I remember correctly, Susan and Peggy used the mincing machine to make the bread crumbs from stale bread. Much easier than doing it by hand!
