I sometimes use condensed milk to make a cheat's chocolate fudge - you just mix everything together, there's no cooking involved. It's pretty nice too, but not as good as the real thing of course!

A question for the chemists out there - I know what evaporation and condensation are, but mustn't evaporated milk also have been condensed, otherwise it would still be a gas? And condensed milk must have been evaporated before it could be condensed?

What's the difference in terms of manufacturing process?
