Off-wind is the opposite of upwind. Basically when the wind is from over the stern. Running with the wind is off-wind sailing. When Roger is sailing wing on wing in SA he is sailing off-wind, this was after he tacked upwind to his mother. Because the speed of the boat reduces the relative wind speed in off-wind sailing sails tend to be larger and lighter. The spinaker is the ultimate off-wind sail.

Hope this is what you wanted.
