The result was amazing - more a thick egg sauce than anything like
scrambled eggs.
With happy layers of lightly seized egg. Which is what I always aim at, both in scrambled egg and in the heart of omelettes. And singularly failed to achieve this time.
Actually, I think I know what I got wrong... I shall find out if I'm right... Soon. Well, fairly soon.
