at least some British readers understand that "Huh?" means something
like "Eh?" or "Are you sure you really mean that?" or "What are you
talking about?".

On the other hand "Hey!" in the middle of a sentence seems to be just
an interjection with little specific meaning. It seems to be usually
preceded by "but", as in, "I think you should do it this way, but hey,
it's not that important".
