The persistence of Char in the deeper lakes (Windermere, etc) has been of mild interest .. once commercially fished & a local delicacy, it is now (Wikipedia) just pursued by anglers with special deep water equipment.
However aquaculture of Char in (Northern) Ontario has been growing since 1999--

A brief tour of Georgian Bay (Lake Huron)showed a few places serving char (didn't see any mention in Toronto, but hampered by thousands of cars viewing the 24 hr "Nuitblanche" art installations..). Whether they will have any if you go in is another matter (and, like 'pickerel', is is v. expensive). So if you visit, you can now taste what 19-20th century Lakelanders were making all the fuss about...
