Here in our northern fastness (somewhat south of Paris, actually, but a little colder in winter) we do have several recipes for pemmican. However, there has been enough direction to websites that I needn't add to them. Just to comment that my daughter Elise has been pestering her mother for use of the food dehydrator (normally used for apples and the like) to dry some moose meat to make authentic Ojibwe pemmican. If she succeeds, I will report back on the results (if I survive).
