I have one or two ideas about that:
1. they ate apples after every meal, so some attempt was made to get something fresh into their diets while camping;
2. I would hazard a guess that they ate rather much better than this normally, a week or two in the wilds would not cause excessive harm in well-fed children;
3. I have always been amazed at the difference between Susan's camp meals and those I remember (time-difference aside) — boiling potatoes, cooking porridge and somehow keeping apple crumble fresh!; and
4. don't forget their "pemmican" wasn't *real* pemmican at all, it was IIRC potted meat - so, yes spammish at the very least.
