Chris,
If you look at the photo of my model of AMAZON that i sent you, taken from above, you can see the handle clearly.
The centreboard has a sort of metal tab that sticks up above the wooden case. The handle is joined to this tab (by a bolt?) so that it acts as a hinge. This is not so clear in the photo. The peg is metal and fastened to a short length of chain attached to the case so that the peg cannot be mislaid. It is shoved through a hole in the 'tab' below the bolt that fastens the handle.
I have no idea how the Lake District builders worked, but I have seen this arrangement on an old sailing dinghy in the south.
