How do junks go about?

I've just finished Missee Lee, and have always puzzled over that
picture of the junk and its rigging. If I remember right, the junk on the book cover is on starboard tack. But what happens when the junk goes about and the wind is from the other direction? Doesn't the sail get blown against the mast?

Also: can junks beat into the wind, or do they always have to be reaching or running?
