From the Collins New National Dictionary (1959; London & Glasgow):
Thick flesh; muscular strength. esp. of the arms and legs; muscles; the
flesh of a boar; a preparation of meat made from pigs' head, salted, boiled,
and allowed to settle in its own jelly. I suspect the last definition
applies and we would call it "head cheese" except it was in a glass container.
