Can add to John's link about Hanmer Springs as we live an hour and a half from them in Christchurch.
Amazingly soporific and you feel completely relaxed to the bone after an hour or so. There are several pools of varying temperatures and also a 'river' feature with rock pools and water courses which are a favourite with children.
However, I remember twenty years ago when there were just the three original pools and a cooler swimming pool. The pool bottoms were a soft silky mud and any jewellery came out black!
Other thermal style pools at Waiwera and Helensville near Auckland are also very popular, just the thing to wash away a week's weariness.
