Don't forget, Jonathan, that Swallow lived in the water permanently, and so would be quite saturated. It also lacked bouyancy tanks or bags which are mandatory today. So no, it wouldn't bob up oncwe the ballast was removed. Also, John's gybe was an involuntary, not a planned one, so the boat would be out of control to a degree. Whether it hit the rock or not would be up to fortune regarding the relative placements of rock and boat. The whole point of building in the clinker method is that it allows one to use very light planking thicknesses; 3/16 inch being quite normal. This is no match for a determined rock approaching at speed! The whole exercise does not stretch my credibility one bit.
