"What did they do to Rowling?"

The first book, "Harry Potter and the Philosopher's Stone" became "Harry Potter and the Sorcerer's Stone." There were also minor changes throughout the text largely to try and change British terms like "jumper" to American terms like "sweater" out of fear that American children wouldn't be able to deal with unfamiliar terms for things it appears.

Done by the American publisher, Scholastic, with some degree of collaboration with the author as far as the terminology changes in the text so I have heard, but I don't know about the title. The stated reason for the title change was that American children wouldn't be able to deal with big words like "philosopher" but it is more likely that they were trying to ride on the popularity of D&D and fantasy awareness by using a highly-attractive word like "sorcerer."

They learned their lesson about the titles, but I don't know if they are still changing the text or not. I've never found that American children have a problem with encountering either long words or British terminology - they just go on and figure it out by context, as indeed do all children given a chance.
