It's not cooking the stuffing in the turkey that causes bacterial infection, it's putting warm stuffing into a thawed turkey the night before so that in the morning you have only to pop it straight into the oven. All night the little beasties are multiplying and creating toxins which, although the bacteria may destroyed in the cooking, the toxins are not.
