Now that you've sailed your own boat, Ed, you know that the boat leans over to leeward from the pressure of the wind in the sails. In a really good breeze, this can be quite a large angle, and the deck comes closer to the vertical position. "Down" then becomes quite obvious; toward the lower side of the deck, or to leeward.
